We’ve had a pretty cold winter here in Florida this year. With the cold weather comes my desire for comfort food. However, with a lot of comfort foods (stews, casseroles, etc.) come lots of calories and fat.
I love a good casserole, but all of the creaminess and the noodles just end up making me feel uncomfortably full.
Enter: the baked chicken divan.
It has the richness and the creamy texture of a casserole…but without the added heft. All it takes is some sliced grilled chicken, broccoli, and diced tomatoes…
A mixture of 98% fat free cream of chicken soup and milk is mixed in, along with a sprinkle of cheese and panko bread crumbs for some crunch…
After a short time in the oven, you are met with a delicious, bubbly treat.
Seriously…scrumptious…
Baked Chicken Divan
*adapted from Campbell’s Kitchen*
- 4 cups cooked broccoli florets
- 1 cup cherry tomatoes, quartered (or one can petite diced tomatoes, drained)
- 2 grilled chicken breasts, cubed
- 1 can (10.75 oz) Campbell's 98% Fat Free Condensed Cream of Chicken Soup (or regular)
- ⅓ cup skim milk
- ½ cup shredded cheddar cheese
- 2 tablespoons panko bread crumbs
- Place broccoli, tomatoes, and grilled chicken in a 9 inch pie plate.
- Stir the Cream of Chicken soup and milk in a small bowl. Pour the soup mixture over the broccoli, tomatoes, and chicken. Top with cheddar cheese.
- Sprinkle panko bread crumbs on top of the cheese.
- Bake at 450°F for 20 minutes, or until the mixture is hot and bubbling.

Haha- this looks so good! I’m glad you post healthier versions of recipes on your site. It’s too often that I get swept into following a recipe step for step, leading to too many calories and a sickly stomach later. 🙁
Looks, yummy and easy…but I can’t imagine chicken divan without rice! How do you serve this? (alone? alongside rice or noodles?)
I have all these ingredients in my kitchen, I’m pretty sure that this is what’s for dinner. 😉
