One of the inevitable quandaries that arises when I make a batch of pulled pork in my slow cooker is what to do with the leftovers.
When I whipped up slow cooker cola pulled pork last week, my fridge seemed to be filled with leftovers. The sheer quantity the recipe yields can sometimes be overwhelming, and eating pulled pork sandwiches day in and day out would get kind of boring. So, what else do you create?
How about some pulled pork taco bites? They’re a perfect little bite…crunchy tortilla chips paired with sweet and tender pulled pork, the coolness of the guacamole, and the fresh flavor of the tomatoes and onions. Not to mention the heat of the jalapeno, if you like a kick!
I’d definitely recommend serving these bites up right away…not that it should be difficult. I may or may not have eaten 3 or 4 of these bites before getting any successfully on a plate to photograph. I couldn’t help myself.
Of course, if you aren’t into food of the miniature nature, you could use these same ingredients in a corn tortilla and make pulled pork tacos in full size. Just as good, just not bite size!
So – what other dishes do you make with leftover pulled pork?
Pulled Pork Taco Bites

Green onions, diced

We love making pulled pork nachos- just spread chips on a cookie sheet, put the pulled pork on top and cover it all the cheese. Melt it and serve with guac and sour cream..mmm.
Yummm – I have not enjoyed nachos in a long time…sounds perfect!
Ahhhhhh! This is so genius! I love this idea.. totally pinning it right now 🙂
