Prosciutto Wrapped Chicken Breast {Ellie, A Wink A Smile}

Hi everyone! My name is Ellie and I write a wedding inspiration blog called A Wink and A Smile. I am a senior at Boston University and when I realized I wanted to work in wedding planning I started following blogs like Weddingbee which is how I came to be a “She Likes Ruffles, He Likes Truffles” follower!

I’m so excited to be here! I know Katie often blogs her cooking adventures and wanted to share a recent recipe I added to my repertoire. It’s easy and sounds fancy. I found this recipe for Prosciutto-Wrapped Chicken Breast from Real Simple Magazine (my edits are in red).

Prosciutto-Wrapped Chicken Breast

Real Simple

Serves 4| Hands-On Time: 10m | Total Time: 25m

Ingredients:

*4 (8 for my edits) slices of prosciutto

*2 tablespoons fresh oregano or 1.5 teaspoons of dried

*4 6-oz boneless, skinless chicken breasts

*Black pepper

*Olive oil

*8 cloves garlic

*½ cup of dry wine (the recipe says optional but I think it’s much better this way!)

Directions

1. (Slice the chicken breast in half to create thinner pieces) Lay the chicken on a cutting board or plate and sprinkle both sides of the chicken with pepper and oregano.

2. Wrap each piece of chicken in a slice of prosciutto.
3. Heat a tablespoon or two of olive oil and whole cloves of garlic in a skillet.
4. Add the chicken and cook until the prosciutto is crisp and the chicken is cooked through, about 5 minutes per side.
5. Once cooked through, transfer the chicken and garlic to plates.
6. Add wine to the pan and simmer until reduced by about half. Spoon over chicken.

Serve with a starch (I like rice or potatoes), a veggie (that didn’t happen tonight) and of course, a glass of wine.
