Raise your hand if you like vegetables!!!! Can you see that? I’m raising my hand oh so very high up in the air. Not a day goes by that does not include them, and being able to make a quick, easy, and flavorful Weekday Supper dish packed with veggies like this Sicilian Spaghetti Squash with Vegetables is oh so perfect.
As soon as I spotted McCormick’s Sicilian Chicken with Tomato, Basil & Garlic Skillet Sauce, I knew exactly what I wanted to create with it. The sauce is Italian style, infused with sweet basil and garlic – two of my all time favorite flavors! There is something special about Italian food that makes me feel cozy, comfortable, and fantastic.
What makes this dish even more incredible is the health factor – no guilt here! Plating yourself up a heaping scoop of these mixed vegetables flavored with the McCormick Skillet Sauce is good for you and will fill you up in no time. I am such a fan of utilizing spaghetti squash for a low carb option in place of noodles. Their slightly sweet flavor adds a nice element to the recipe as well. However, if you absolutely cannot live without the noodles, you could use spaghetti or angel hair pasta in place of the spaghetti squash…OR serve this vegetable dish on top of a bed of noodles. Options: you have them!
And if that was not enough, the time required to put this Sicilian Spaghetti Squash together is pretty minimal. I baked my spaghetti squash the previous day and had already removed the strands and stored them in the refrigerator. All I had to do was toss everything together in a skillet, add the Skillet Sauce, stir, and my dinner came together in less than 30 minutes. You really can’t beat that, can you? I know I can’t. For some reason these past few weeks have been oh so busy for me, and the ability to get my dinner on the table in a snap has truly been a life saver. No need for take out: when all I need is a few minutes and a skillet, making a recipe in my kitchen on a busy night is still A-OK with me!

- 2 tablespoons olive oil
- 1 medium spaghetti squash (about 2 pounds), cooked and separated
- ¼ cup onion, diced
- 2 cups broccoli florets, lightly steamed
- 1 red bell pepper, diced
- 2 cups fresh spinach
- 1 package McCormick's Sicilian Chicken with Tomato, Basil & Garlic Skillet Sauce
- Shaved Parmesan, for garnish
- In a large skillet, heat the olive oil over medium high heat. Add the diced onion and saute for 2-3 minutes until they turn translucent.
- Add the broccoli, red bell pepper, and spinach to the skillet. Saute until the spinach has almost fully wilted.
- Add the spaghetti squash and the Skillet Sauce. Saute for an additional 3-4 minutes until the skillet contents are heated through.
- Serve with shaved Parmsan cheese as a garnish (if desired). Enjoy!
