In a bowl, mix 1 package unflavored gelatin with the cold water and set aside.
Heat milk in a heavy sauce pan. In a separate bowl, beat eggs. Add sugar and cornstarch to eggs and mix. Stir the egg mixture into the heated milk and cook just until thickened. Do NOT overcook!!!
Add softened gelatin to milk mixture, and beat with a whisk until smooth. Add butter, salt, and vanilla.
Cool slightly, then pour into the fully cooked pie crust.
Chill for at lest an hour (until fully cooled throughout).
At serving time, cover each slice thickly with whipped cream and top with fresh berries and shaved/grated chocolate.
