Ginger and cilantro baked tilapia

  • 6 small/medium tilapia fillets (or similar thin white fish)
  • 1 jalapeno pepper (optional)
  • 6 garlic cloves
  • 2 tbsp grated ginger
  • 4 tbsp soy sauce
  • ½ cup white wine
  • 2 tsp sesame oil
  • ⅔ cup chopped cilantro, and some extra for garnish
  • Scallions for garnish
Instructions
  1. Preheat oven to 475ºF.
  2. Pat the fish dry and season lightly with salt and pepper. Place fish in a glass baking dish, or a shallow baking pan lined with tin foil (make sure it has sides!).
  3. Chop the jalapeno pepper (if desired), and set aside. Place chopped garlic and grated ginger in a small food processor with soy sauce, white wine, sesame oil, and cilantro...then blend.
  4. Pour the sauce over the fish. Sprinkle the chopped jalapeno over the top of the fish (if desired).
  5. Bake for about 8 minutes, or until the fish flakes easily and is cooked through (it will still be moist though!).
  6. Serve immediately with sticky white rice and roasted vegetables, and garnish with scallions and cilantro.
