Sauteed Spinach "Salad"

Ingredients
  • ¼ yellow onion, diced thin
  • 1 tbsp Extra Virgin Olive Oil
  • 1 garlic clove, minced
  • 1 bag fresh spinach leaves
  • ¾ cup grape tomatoes, quartered
  • Salt and pepper, to taste
Instructions
  1. Heat a skillet over medium high heat. Add olive oil and minced garlic; saute until golden (about 45 seconds).
  2. Add diced onions; saute until caramelized (about 2 minutes).
  3. When onions have caramelized, add bag of fresh spinach leaves to the skillet; saute until reduced/wilted.
  4. When spinach is almost completely reduced, add grape tomatoes; saute 1 minute.
  5. Remove skillet from heat; add light crumbled feta cheese.
