Sweet and Spicy Thai Style French Fries

  • 1 bag Grown In Idaho® fries (I chose Hand-Cut style)
  • ½ cup mayonnaise (I use olive oil mayo)
  • 1 tablespoon white wine vinegar
  • 1 tablespoon sriracha sauce
  • 1 tablespoon toasted sesame seeds (plus 1 more for sprinkling on finished dish)
  • 1 tablespoon sweet chili sauce
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh mint, chopped
  • ¼ cup roasted cashews, chopped
  • salt and pepper
Instructions
  1. First, prepare the french fries. Cook according to package instructions. If using an air fryer, place french fries in an even layer and select the french fry setting. Toss the fries 1-2 times during the cooking process to crisp evenly.
  2. While the french fries are cooking, make the sesame sriracha aioli. In a bowl, combine the mayonnaise, white wine vinegar, sriracha sauce, and 1 tbsp of sesame seeds. Stir until incorporated: add salt and pepper to taste.
  3. Wash the fresh herbs and finely chop.
  4. Coarsely chop the cashews.
  5. When the french fries are done cooking, place in a serving dish or platter. Drizzle with ½ to ⅔ of the aioli (save some on the side for dipping!) and a tablespoon of sweet chili sauce. Sprinkle with the fresh herbs and the chopped cashews. Serve immediately, and ENJOY!
