Taco Calzone Mummies

  • 2 Pizza Crusts
  • 1 can (15.5 oz) black beans, rinsed and drained
  • 1 cup frozen (or fresh) corn
  • 1 can (10 oz) RO*TELĀ® Original Diced Tomatoes and Green Chilies
  • 1 bell pepper (any color), diced
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • 1 clove garlic, minced
  • 1 egg (optional)
Instructions
  1. Preheat oven to 400 degrees F.
  2. As the oven preheats, make the filling. Heat a deep skillet over medium heat. Add about 2 tablespoons of olive oil or other cooking oil to the pan with the garlic. Add the corn and bell pepper: saute 2-3 minutes. Add the cumin, chili powder, RO*TELĀ®, and beans. Stir/saute for 2-3 more minutes until heated through and the liquid in the pan is cooked down. Set aside to cool slightly.
  3. Cut each of the pizza doughs into two equal halves (approximately square shaped). Place the dough onto a parchment lined baking sheet. Scoop the filling in the center (distributing between the 4 pieces), leaving a 1-2 inch border at the top and the bottom, and about 3-4 inches on each side to create the wraps. Using a sharp knife or kitchen scissors, cut horizontal strips down the sides of the pizza dough, about ¼ - ½ inch thick (they do not need to be perfect!). Alternating sides, stretch and wrap the strips across the filling to create the mummy wraps.
  4. If desired, whisk an egg with a fork in a small bowl and brush the egg wash over the calzones before baking to create a glossy shine on the mummies.
  5. Bake for 10-12 minutes, or until the calzones are golden brown. Remove from oven and allow to cool 1-2 minutes before serving. Enjoy!
