Toasted Almond Oatmeal Chocolate Chip Cookies
Toasted Almond Oatmeal Chocolate Chip Cookies are the perfect combination of salty, sweet, and oh so delicious! You need to whip up a batch!
  • 1 cup almonds (plain or lightly salted)
  • 1 cup unsalted butter
  • 1 cup sugar
  • ⅔ cup light brown sugar, packed
  • ½ teaspoon salt
  • 1½ teaspoons vanilla extract
  • 2 eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 cups all-purpose flour
  • 1 cup oats
  • 12 ounces semisweet chocolate chips
  1. Preheat the oven to 350°F.
  2. Turn a dry skillet to medium heat. Add the almonds. Stir occasionally, toasting for 3-4 minutes, until almonds are fragrant. Remove from the pan and chop roughly on a cutting board. Set aside.
  3. Heat the same skillet over low heat and add the butter - melt. Add the butter in a large bowl with sugar, salt, and vanilla. Combine, and then beat in the eggs.
  4. Carefully sift in the flour, baking powder, baking soda, and oats. Stir to combine. Add the chocolate chips and the toasted almonds: gently stir to combine in the dough.
  5. Roll the cookies in large tablespoon sized balls. Place on a parchment lined baking sheet. Bake for 9-11 minutes, until golden brown. Remove from oven and transfer to a wire rack to cool completely. Serve, and enjoy!
