Sicilian Spaghetti Squash with Vegetables
 
 
Veggie filled and packed with flavor: this meatless meal will satisfy!

Ingredients
  • 2 tablespoons olive oil
  • 1 medium spaghetti squash (about 2 pounds), cooked and separated
  • ¼ cup onion, diced
  • 2 cups broccoli florets, lightly steamed
  • 1 red bell pepper, diced
  • 2 cups fresh spinach
  • 1 package McCormick's Sicilian Chicken with Tomato, Basil & Garlic Skillet Sauce
  • Shaved Parmesan, for garnish
Instructions
  1. In a large skillet, heat the olive oil over medium high heat. Add the diced onion and saute for 2-3 minutes until they turn translucent.
  2. Add the broccoli, red bell pepper, and spinach to the skillet. Saute until the spinach has almost fully wilted.
  3. Add the spaghetti squash and the Skillet Sauce. Saute for an additional 3-4 minutes until the skillet contents are heated through.
  4. Serve with shaved Parmsan cheese as a garnish (if desired). Enjoy!
