Grilled Pizza with Sausage and Spinach Recipe for #SundaySupper

  • Prepared pizza dough (our grocery store, Publix, makes awesome dough)
  • 6 tablespoons marinara or pizza sauce
  • 1-2 cups mozzarella cheese (amount according to taste preference)
  • 6 oz fresh spinach leaves
  • ½ pound cooked Italian sausage
  • 1 tomato, sliced
Instructions
  1. Heat a large skillet over medium-high heat. Add the spinach leaves, stir, and allow them to wilt (about 5-6 minutes). Place a few paper towels on top of a plate and scoop the cooked spinach on to the paper towels to drain. You can also use frozen spinach, but make sure to cook it and drain the excess liquid.
  2. Meanwhile, preheat the grill and start rolling out your pizza dough. I roll my pizza dough about ¼ inch thick (the outside edges tend to be a little thicker, however). Make sure you flour your pizza dough thoroughly. Place on a baking sheet or other surface to transfer to the grill.
  3. When the grill is preheated, carefully transfer the pizza dough on to the grates. Cook for 5-6 minutes, until the bottom of the dough is golden brown. Transfer back to the pan, but flip the pizza dough so the bottom that was touching the grates is now facing up.
  4. On the turned over pizza dough, spread about 6 tbsp marinara sauce, the cooked sausage, wilted spinach, mozzarella, and sliced tomato evenly. When this is complete, transfer the pizza back on to the grill for an additional 3-4 minutes, until the pizza is cooked through to desired levels and cheese is bubbly. Remove from the grill, slice with a pizza cutter, and enjoy!
