Summer Supper

It has been insanely hot and humid around these parts lately. The heat definitely influences my mood when it comes to food. During these sticky summer months, it is hard to think about eating hot and steamy dishes. Soup? Forget about it. Casserole? No freaking way. I usually find myself wanting to eat something cool and refreshing. That typically relegates Justin and me to salads. Although I can whip up a multitude of varieties (Greek, Mexican-style, a simple spring mix, Caesar…the list goes on), it does tend to get old after a few days.

However, pairing a salad with another complementary item can work wonders! On one half of the plate, an unassuming (yet refreshing) Greek inspired salad with red onion, bell pepper, cucumber, olives (green ones, because I’m not fond of Kalamata olives), and scrumptious feta cheese.

And what do we have on the other side of the plate? That would be a yummy, Greek-inspired turkey burger I whipped together in only a few minutes’ time.

All it takes is ground turkey breast, diced onion, sundried tomatoes, and some feta cheese smushed together into a patty. After grilling it to perfection, I placed the burgers on a Flatout Bread Rosemary and Olive Oil Foldit with lettuce and a sprinkle of extra feta cheese. So…delicious: I highly recommend it. I also suggest that you go to the store ASAP and grab some of the Foldits from Flatout: I love them. At only 100 calories, they’re a guilt free and tasty way to have a sandwich. The Rosemary and Olive Oil are definitely my favorite – the flavor is wonderful. Pressing them in a George Foreman grill filled with lunch meat/toppings makes a really delicious panini as well. I’ve also made mini pizzas on them when I’m feeling lazy and want something quick and easy. Ok, enough about the bread…

  • Ooh yum, that looks so good!! Haha it doesn’t matter what time of the year it is for me…I’ll have soup every day, all day! That salad looks amazing to me right now though!!

    • Yeah, I am kind of with you on the soup thing…I actually made soup for dinner last night! More brothy soups seem to be my choice for summer, and then I make heartier ones in the cold weather!

  • I’m all about the salads. I made a simple salad dressing that’s AMAZING and I swear, I could eat it every day. Unfortunately, my boyfriend hates salad so I’ll always have to make something in addition for him.

  • Yummy! I haven’t seen FlatOuts at my stores… we have something called Sandwich Slims by Pepperidge farms. Do you ever do kalmata olives in your Greek salad?

  • That looks delicious! I’ll have to try this out next time. I’ve recently rediscovered the george foreman grill so I’ll have to keep an eye out for Flatout bread.
