The colors of autumn can be so gorgeous: don’t you just love when the trees turn beautiful shades of orange, yellow, and red? I must admit that I miss seeing them…but I was lucky enough to get a glimpse of the changing seasons when I was in Michigan last week. Today we are celebrating one of the fun colors of fall: ORANGE! All of the recipes in today’s Sunday Supper are inspired by the color orange. When I was brainstorming what to make, I was immediately drawn to pumpkin as an ingredient. AND, one of my favorite cookie recipes ever happens to involve pumpkin. Score! You have to have a few of these pumpkin harvest cookies: they’re pretty darn good!
This recipe is really customizable, which is an aspect I really love. Today’s version happens to contain dark and white chocolate chips, coconut, and raisins. However, you can really get creative…compost cookie style. Justin loves to have chopped walnuts and craisins added into the batter. Oats are also delicious.
These pumpkin harvest cookies are cake-like in texture. They are pillowy soft and very moist! I normally love my cookies with a bit of crunch, but there is just something awesome about these soft baked treats that make me oh so excited. Make yourself a batch when you have a moment…and if you only want a few now, the dough freezes wonderfully, so you can save some for later (just saying…)! To be honest, I usually cut this recipe in half, because the full size makes an enormous amount of cookies!
Pumpkin Harvest Cookies
- 5 cups flour
- 1 tsp salt
- 2 tsp cinnamon
- 2 tsp baking soda
- 1.5 cups butter
- 2 cups firm packed brown sugar
- 1 cup sugar
- 1 egg
- 1 can pumpkin (NOT pumpkin pie mix)
- 1 tsp vanilla
- 1 cup dark chocolate chips
- 1 cup white chocolate chips
- 1 cup shredded coconut
- ½ cup raisins
- Preheat oven to 350 degrees F.
- In a bowl, combine flour, oats, salt, baking soda, and cinnamon. Set aside.
- In another large bowl, cream softened butter with a mixer. Add brown and white sugars gradually until the butter mixture is fluffy. Then, add egg and vanilla and blend until mixed.
- With the mixer still running, alternate adding scoops of pumpkin and dry ingredients. Mix well until incorporated, scraping the sides of the bowl occasionally.
- Use a spatula/large spoon to stir in the chocolate chips, coconut, and raisins.
- On a nonstick baking sheet, deposit rounded tablespoon sized drops of batter evenly on the tray (I use a 2 tsp scooper tool to easily scoop the cookies).
- Bake cookies for 12-15 minutes, until fully cooked/set, with a small amount of browning around the bottom edges. Remove from the tray and allow to cool on a wire baking rack. Enjoy!

These look like the perfect fall cookie! Thank you so much for joining in this week!
Such a versatile recipe. They look all plump and wonderful!
What is this Sunday Supper and how have I not heard about it?? I must jump on this bandwagon 😉
Also, meant to tell you at Seasons 52…I know you are going to Halloween Horror Nights on Thursday. My friends told me that one year they went on a non-peak night and were able to purchase the front of the line access passes for 1/2 off about 1/2 way through the night. Just wanted to pass along the info in case you found yourself stuck in long lines and wanted to pay to see everything at a discount 😉
Thanks! We were actually there on Thursday this week (a few days ago)! The lines weren’t long on a Thursday night; the only house we had to wait a long time to get into was The Walking Dead house…which was expected. All the other houses we waited only about 10-20 minutes, so not too terrible for not having an Express pass!
I can personally state these cookies rock! Katie brought me some to take home to my very sick boyfriend. He ate them up and loved them! Thanks Katie for sharing!!!
These cookies look so succulent, never tried a pumpkin cookie before hence this recipe is inspirational. Love the name of your blog too 🙂
Love the lovely flavors in your cookies!!The coconut and chocolate sound really good in here 🙂 Perfect with my cup of tea 🙂

These are such adorable cookies. I love that you can mix up the ingredients and customize them.
The most recent batch I made, I separated the dough into two bowls: my husband made his own batch and I filled mine in with these goodies! And of course, he finished eating his first, so he broke into my stash…boys…

I love pumpkin cookies – and love your addition of coconut and chocolate!!
Great combination of flavours in these cookies! I also prefer cookies with a bit of crisp but you describe these beautifully – they sounds like little bites of cake – yum!
Thanks Nancy! These cookies are my ONE exception to my crispy/chewy cookie rule. Haha!
These remind me of coconut balls! I don’t know why, but they do! I bet they are delicious will all that chocolate in them.
