Pumpkin Harvest Cookies for #SundaySupper

The colors of autumn can be so gorgeous: don’t you just love when the trees turn beautiful shades of orange, yellow, and red? I must admit that I miss seeing them…but I was lucky enough to get a glimpse of the changing seasons when I was in Michigan last week. Today we are celebrating one of the fun colors of fall: ORANGE! All of the recipes in today’s Sunday Supper are inspired by the color orange. When I was brainstorming what to make, I was immediately drawn to pumpkin as an ingredient. AND, one of my favorite cookie recipes ever happens to involve pumpkin. Score! You have to have a few of these pumpkin harvest cookies: they’re pretty darn good!

This recipe is really customizable, which is an aspect I really love. Today’s version happens to contain dark and white chocolate chips, coconut, and raisins. However, you can really get creative…compost cookie style. Justin loves to have chopped walnuts and craisins added into the batter. Oats are also delicious.

These pumpkin harvest cookies are cake-like in texture. They are pillowy soft and very moist! I normally love my cookies with a bit of crunch, but there is just something awesome about these soft baked treats that make me oh so excited. Make yourself a batch when you have a moment…and if you only want a few now, the dough freezes wonderfully, so you can save some for later (just saying…)! To be honest, I usually cut this recipe in half, because the full size makes an enormous amount of cookies!

Ingredients
  • 5 cups flour
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1.5 cups butter
  • 2 cups firm packed brown sugar
  • 1 cup sugar
  • 1 egg
  • 1 can pumpkin (NOT pumpkin pie mix)
  • 1 tsp vanilla
  • 1 cup dark chocolate chips
  • 1 cup white chocolate chips
  • 1 cup shredded coconut
  • ½ cup raisins
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a bowl, combine flour, oats, salt, baking soda, and cinnamon. Set aside.
  3. In another large bowl, cream softened butter with a mixer. Add brown and white sugars gradually until the butter mixture is fluffy. Then, add egg and vanilla and blend until mixed.
  4. With the mixer still running, alternate adding scoops of pumpkin and dry ingredients. Mix well until incorporated, scraping the sides of the bowl occasionally.
  5. Use a spatula/large spoon to stir in the chocolate chips, coconut, and raisins.
  6. On a nonstick baking sheet, deposit rounded tablespoon sized drops of batter evenly on the tray (I use a 2 tsp scooper tool to easily scoop the cookies).
  7. Bake cookies for 12-15 minutes, until fully cooked/set, with a small amount of browning around the bottom edges. Remove from the tray and allow to cool on a wire baking rack. Enjoy!
