Pulled Pork Taco Bites – what to make with pulled pork leftovers!

One of the inevitable quandaries that arises when I make a batch of pulled pork in my slow cooker is what to do with the leftovers.

When I whipped up slow cooker cola pulled pork last week, my fridge seemed to be filled with leftovers. The sheer quantity the recipe yields can sometimes be overwhelming, and eating pulled pork sandwiches day in and day out would get kind of boring. So, what else do you create?

How about some pulled pork taco bites? They’re a perfect little bite…crunchy tortilla chips paired with sweet and tender pulled pork, the coolness of the guacamole, and the fresh flavor of the tomatoes and onions. Not to mention the heat of the jalapeno, if you like a kick!

I’d definitely recommend serving these bites up right away…not that it should be difficult. I may or may not have eaten 3 or 4 of these bites before getting any successfully on a plate to photograph. I couldn’t help myself.

Of course, if you aren’t into food of the miniature nature, you could use these same ingredients in a corn tortilla and make pulled pork tacos in full size. Just as good, just not bite size!

Pulled Pork Taco Bites

Ingredients

Scoop shaped tortilla chips (or any tortilla chip desired)

Shredded cabbage or lettuce

Pulled pork (get the recipe here)

Guacamole

Cherry tomatoes, diced

Green onions, diced

Jalapeno, diced (optional)

Instructions

1. Arrange tortilla chips on a platter. Fill the bottom of each with a small amount of shredded cabbage or lettuce.

2. Heat the pulled pork to desired temperature, and add about a tablespoon of meat to each tortilla chip. Top each with a dollop of guacamole, and sprinkle diced tomatoes, onions, and jalapenos on top. Serve immediately – enjoy!
