I love a good martini. I especially love a martini that involves a splash of champagne. Enter: the diamond fizz martini. Isn’t it pretty?
I got hooked on the diamond fizz when dining at a P.F. Chang’s a few years ago (it is called the Chinese 88 on their menu). Anyway, a traditional diamond fizz martini involves lemon juice and powdered sugar, but I have a simple little cheat that I implement for ease and speed. And…for my sanity. I don’t want to mess with juicing an entire lemon to make my martini. Me = lazy.

Ingredients
- 2 ounces gin
- 1 ounce sour mix
- Squeeze of lemon juice
- 1 ounce champagne or sparkling wine
- Ice
Instructions
- In a cocktail shaker, combine: gin, sour mix, squeeze of lemon juice, and ice
- Shake ingredients vigorously and strain into a martini glass
- Top cocktail with 1 oz champagne
See? Totally easy. And delicious. I have to remind myself not to overdo it with too many of these, because they are that good.
That seems like the perfect summer cocktail! The only problem… popping a champagne cork for 1 oz of champagne 😉
Agreed! So, sadly this recipe is only broken out when there are many people to share it with! That, or on a day that I make mimosas in the morning and have extra champ leftover….. 😉

This is a great drink! I just buy small bottles(splits) of champagne – OK sparkling wine from the grocery store and keep them in the fridge. Just over a glass in each and you can always use them up!
I love that idea as well – I always have some of those small bottles around too! Perfect for cocktail toppers instead of wasting an entire bottle!
