Greek inspired veggie burger pita sandwiches

There’s something about the summer months that gets me thinking about the grill. I have so many memories of summertime cookouts. We’d spend the day at the beach, and then trek up to the house for lunch as a family with burgers, chips and dip, and maybe a popsicle for dessert! Things may be a little different now than in my childhood, but that doesn’t mean I don’t enjoy breaking out the grill for some goodies! Today I’m taking a little bit of a spin on a traditional burger with some Greek inspired veggie burger pita sandwiches.

Ever since we moved to Florida (years ago), I’ve become a huge fan of Greek food. It’s in an abundance in the area we live in, so I’m fortunate to be able to enjoy the cuisine quite often. One of my all time favorite sauces for dipping (or spreading on sandwiches) is tzatziki sauce. I can’t get enough, and it probably was a huge contributing factor to the creation of these Greek inspired veggie burger pita sandwiches.

Let’s start with the main ingredient, and the star of the show: the MorningStar Farms® Meat Lovers Burgers. They are a new product that is now available at Walmart in the frozen foods section. These burgers have “beef-like” taste and texture that packs 27 grams of positive Plant Based Protein. Yes, you read that correctly. 27 grams of protein. That’s amazing. I’m always on the lookout for plant based options that provide a high amount of protein so I stay satisfied for longer! Each burger is a quarter pound, is perfectly seasoned, and packs each bite with plant based protein and veggies. It’s a winning combination in my book!

I’ve enjoyed MorningStar Farms® products frequently in the past (I’ve been a huge fan of their black bean burgers), so I was excited to experience these new Meat Lovers Burgers. As a vegetarian, I do tend to have opinions on products like these, and I can honestly say I was impressed by these patties! AND – Justin (who is not a vegetarian) liked them too! I love when we can both enjoy the same meal like this! MorningStar Farms® is an easy to make, healthier meal solution for any occasion. There are options that everyone in your family will love, and now have no artificial ingredients, are made with non GMO soy, and include vegan options. In addition to making sandwiches, go outside the box a little bit too! I will crumble some burgers and use them inside tacos or stuffed peppers. Top them with an egg and some avocado in the morning for a delicious breakfast. There are so many options!

For these Greek inspired veggie burger pita sandwiches, I first whipped up a batch of tzatziki sauce. If you’ve never done this before do yourself a favor and make some immediately. I then gathered up all of my favorite ingredients for a salad and sandwich combination. Side note: don’t you just love how colorful Mediterranean food is? It screams summer to me!

The sandwiches are a cinch to put together. Layer your pita (I recommend the pillowy soft kind so you can easily fold it over) with lettuce and tomatoes. After grilling the Meat Lovers Burgers, I cut them in half and placed them inside the pitas. A generous drizzle of tzatziki completed the sandwich, and then it was time to enjoy next to a Greek salad. You can go with the basics like I did today – lettuce, tomatoes, cucumbers, bell pepper, kalamata olives, feta…but if you’re feeling fancy you can add some other favorite toppings of mine, like chickpeas, pepperoncini peppers, and beets.

Ingredients
  • For the tzatziki sauce:
  • 12 ounces plain Greek yogurt
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ large cucumber, finely grated
  • 1 tablespoon minced fresh dill
  • For the sandwiches:
  • MorningStar Farms® Meat Lovers Burgers
  • Pita bread
  • Tzatziki sauce
  • Lettuce
  • Tomatoes, sliced thin
Instructions
  1. First, make the tzatziki sauce. Finely grate ½ of a large cucumber. Press/strain to remove as much water as possible. Mix together the Greek yogurt, garlic, olive oil, and salt. Refrigerate for at least an hour. Once refrigerated, add the cucumber and fresh dill - mix to combine.
  2. Next, create the sandwiches. Cook the MorningStar® Farms Meat Lovers Burgers according to package instructions (I grilled them). Once cooked, slice each burger in half. Assemble the sandwiches on pita bread with lettuce, tomatoes, and the two halves of the Meat Lovers Burgers. Top with tzatziki sauce.
  3. Serve alongside a Greek salad, and enjoy!

I already mentioned that these Meat Lovers Burgers are new and can be found at Walmart, but can we talk for a second about Walmart’s Online Grocery Pickup service? It’s a convenient and easy option to use for picking up your groceries, and I definitely have a feeling I’ll be using it frequently in the future once a baby joins our family! At my local Walmart they have designated parking spaces up front for the grocery pickup – you simply reserve a time to pick up your items when you make your order. When you order and pick up your Meat Lovers Burgers, make sure you use the Ibotta app to redeem their current MorningStar Farms offer! I’ve been using Ibotta for almost a year now, and I love getting money back for items I’m already purchasing! It’s so easy to use – check it out if you haven’t already!
