Ginger and cilantro baked tilapia

Oh boy…my friends, do I have a recipe for you today.

I’m quite guilty of this one Pinterest habit: I pin a lot of delicious looking food, but I don’t always get around to making each and every dish that I am inspired by. Slowly but surely, I have been making an effort to go through my boards (check out my savory, sweet, and cocktail boards on Pinterest).

I came across the recipe for ginger cilantro baked tilapia over on theKitchn a few weeks ago. After I pinned it, it received a flurry of repins. I knew that I had to try it out…everyone else seemed to agree with me too, right?

We tested it out with my parents: we doubled the sauce recipe and used 6 small/medium tilapia filets instead of 2 large ones (my mom and I each ate 1, dad and Justin had 2. However, it was SO good that I could have easily consumed 2 of them myself), and it seemed to be the perfect ratio.

What is even more awesome about this recipe was that it is SO easy to make. Trust me, you don’t have to be a skilled chef to create this dish successfully.

We served ours up with a scoop of sticky rice and roasted vegetables. As you can see above, there was plenty of extra sauce to spoon over the top of our fish/rice to add a little extra flavor.

So, you clearly need to make this recipe STAT…here’s how you do it!

Ginger and cilantro baked tilapia

Ingredients
  • 6 small/medium tilapia fillets (or similar thin white fish)
  • 1 jalapeno pepper (optional)
  • 6 garlic cloves
  • 2 tbsp grated ginger
  • 4 tbsp soy sauce
  • ½ cup white wine
  • 2 tsp sesame oil
  • ⅔ cup chopped cilantro, and some extra for garnish
  • Scallions for garnish
Instructions
  1. Preheat oven to 475ºF.
  2. Pat the fish dry and season lightly with salt and pepper. Place fish in a glass baking dish, or a shallow baking pan lined with tin foil (make sure it has sides!).
  3. Chop the jalapeno pepper (if desired), and set aside. Place chopped garlic and grated ginger in a small food processor with soy sauce, white wine, sesame oil, and cilantro...then blend.
  4. Pour the sauce over the fish. Sprinkle the chopped jalapeno over the top of the fish (if desired).
  5. Bake for about 8 minutes, or until the fish flakes easily and is cooked through (it will still be moist though!).
  6. Serve immediately with sticky white rice and roasted vegetables, and garnish with scallions and cilantro.
