Dairy Free Strawberry Silk Pie
 
 
Creamy dairy free strawberry silk pie made with silken tofu, fresh strawberries, and a graham cracker crust! With just a few ingredients, you'll have this dessert ready in a snap!

Ingredients
  • For the filling:
  • 1 pound silken tofu
  • 8-10 Florida strawberries, plus 8-10 more for decorating the top of the pie
  • 1 tablespoon honey
  • For the crust:
  • 9 graham crackers
  • ¼ cup packed light brown sugar
  • 5 tablespoons coconut oil, melted
Instructions
  1. First: make the crust. Use a food processor to pulse the graham crackers into a fine crumb (or your desired texture). Add the crumbs to a bowl along with the brown sugar and melted coconut oil. Mix until combined.
  2. Place the crumb mixture into a pie plate. Use the bottom of a glass to firmly press the crumbs into the pie plate evenly. When complete, cover the crust and place in the refrigerator for at least one hour to allow it to set.
  3. When the pie crust has set, create the filling. Add the tofu, 8-10 Florida strawberries, and the honey into a food processor or blender. Blend until smooth. I chose to fully blend the strawberries into the filling to create a smooth texture in my pie filling, but you could also pulse in a few extra strawberries to create chunks within the pie as well! I also recommend tasting the filling to determine desired sweetness before placing into the pie crust. If you find it not quite sweet enough, I would recommend blending a few tablespoons of powdered sugar into the filling until it reaches desired sweetness!
  4. Pour the strawberry filling into the prepared pie crust. Cover and refrigerate for at least 1 hour.
  5. To decorate, thinly slice additional strawberries and place them on top of the prepared pie. Slice, and serve!
