Easily create a meatless breakfast, brunch, or snack option - avocado toast with coconut bacon! It's sweet, salty, crunchy, and creamy at the same time!

Ingredients
For the coconut bacon:
1 cup shaved coconut flakes (unsweetened)
1 tablespoon tamari
1 tablespoon liquid smoke
½ tablespoon maple syrup
Salt and pepper
To serve:
Multigrain bread
Avocado
Grape tomatoes, halved
Balsamic glaze
Instructions
Preheat the oven to 325 degrees F.
Mix the coconut flakes, tamari, liquid smoke, and maple syrup together in a bowl until combined. Spread into an single layer on a parchment lined baking sheet.
Bake for 8-10 minutes, turning about halfway through until the coconut bacon is crisp and golden brown.
Remove from oven and set aside to cool - it will crisp up even more as it cools.
To make the avocado toast, toast slices of multigrain bread until golden brown. Top with thinly sliced avocado, about 5-6 grape tomato halves, a generous sprinkle of coconut bacon pieces, and drizzle with balsamic glaze. Serve, and enjoy!
