Cooking With Kids: S'mores Pops and S'mores Brownie Bites

  • 1 brownie mix, any chocolate variety desired
  • 2-3 sheets graham crackers
  • Large jet-puffed marshmallows
  • Mini cupcake liners (if desired)
  • Ziplock bag
Instructions
  1. Preheat oven and prepare brownie mix according to package instructions.
  2. Line a mini cupcake pan with mini cupcake liners, or spray the pan thoroughly with nonstick cooking spray.
  3. Crush/crumble the graham cracker sheets into crumbs inside the ziplock bag using a rolling pin or by hand. Scoop a small amount into the bottom of each mini cupcake liner. You need just enough to cover the bottom in a thin layer - if the graham crackers are too deep, they will crumble off after baking and dry out your brownies.
  4. Use a small scoop (a tablespoon sized spoon would work well) to scoop the prepared brownie batter into the cupcake liners, on top of the graham crackers. Fill the wells almost to the top. Place the brownies into the oven to cook; about 10 minutes.
  5. As the brownies are baking, use a knife to cut the marshmallows in half, so you have enough to cover the top of each brownie being cooked.
  6. When the brownies are done baking, remove from the oven and place a marshmallow half, sticky side down, on to the top of each brownie bite. Enjoy!
