Chocolate covered “party popcorn” for #SundaySupper

Well, the holiday season is officially in full swing! I’m beginning to anticipate all of the treat making that has to occur over the next few weeks. I’m sure I am not the only one: the holidays are a time when I exchange a good deal of homemade sweets. It can be a daunting process if left to the last minute. And let’s be honest: as much as I try to prepare in advance, there is always something that has to be made at the last second for some reason or another.

That’s why I like to have a few delicious and easy to make sweet treats in my back pocket for just an occasion. Or…for when I completely botch a batch of something else I was spending a long time preparing. Yeah…that’s happened too. Having an alternate plan on the back burner is pretty much necessary in my house.

I love this chocolate covered “party popcorn” for those instances. Heck, I just like this treat in general and whip up a batch pretty regularly. When you use the white chocolate melting bark to cover the popcorn, you can add food coloring to suit the holiday/event/etc. Red and green might be great for Christmas…or a nice light blue paired with white/silver/blue sprinkles. The combination is really up to you depending on the occasion, and you could even use multiple colors for extra fun! I have also added mini M&Ms in the past for some extra chocolate goodness…the combination is truly a mix and match situation!

Chocolate Covered “Party Popcorn”

Ingredients

3/4 cup unpopped white corn kernels

10 oz almond bark or other white chocolate melting bark/chips

4 drops blue food coloring (or other color of choice)

1/4 cup multicolored jimmy sprinkles

Instructions

1. Pop the white corn kernels (I use an air popper, but you can also pop a microwave bag). When popped, spread the kernels in a single layer on parchment paper or tin foil, and remove any stray unpopped kernels.

2. Melt the almond bark/white chocolate in the microwave or over a double boiler, according to package instructions. Add drops of food coloring to achieve the desired color for the chocolate.

3. Use the tines of a fork to sprinkle the melted chocolate over the top of the popcorn evenly. Then, sprinkle the jimmies over the top of the chocolate so it sticks to the mixture.

4. Allow popcorn to cool completely, then carefully break apart the pieces and store in an airtight container before serving. Enjoy!
