Excuse me: I’m going to need a moment alone with this dessert. I never thought I could love banana bread more, but it turns out that taking it from breakfast time to after dinner was something I absolutely needed to do.
Today, the Sunday Supper folks are getting together to share recipes inspired by music. First – how fun is that idea? Second – my list of potential songs was a mile long. I honestly think I’ll be inspired to continue this idea with my cooking.
Anyway, as I racked my brain for the perfect song, I was standing in the kitchen perusing what we had available in the fridge/pantry. A few overripe bananas were sitting on the counter, looking sad and forlorn. “Oh yes,” I thought, “do I have plans for you, my friends…” An appropriate song instantly popped into my head, and I got to cooking. Those bananas were transformed into the chocolate chip, caramel, and walnut banana bread I shared with you on Friday. And to be honest: the bread itself was amazing all on its own.
But how can you resist adding ice cream? I mean, it was just begging me to scoop some vanilla frozen yogurt on the thick slices of previously breakfast-y goodness. Thus, the idea for a banana bread ice cream sandwich was born. Ok, so I guess you really can’t eat this with your hands…especially when you get overzealous like me and heap an additional scoop of fro yo on top of the creation. Let’s just call it a “fork and knife” sandwich, shall we?
Ok, sing it with me now (to the tune of Hollaback Girl by Gwen Stefani, of course):
“This dish is bananas, b-a-n-a-n-a-s!” At least, that is what I thought when I took a bite. If you have not used your banana bread for dessert purposes yet, I implore you: make haste and try it out. I just might have to “accidentally” buy too many bananas every once in a while just so I can make the bread to have dessert like this again.

Chocolate chip, caramel, and walnut banana bread ice cream sandwich
- 2 slices chocolate chip, caramel, and walnut banana bread
- 2 scoops vanilla ice cream or frozen yogurt
- Layer one scoop of ice cream between two thick cut (about 1 inch) slices of banana bread. Top with an additional ice cream scoop if desired.
- Eat with a fork or spoon. Don't feel obligated to share. Enjoy!
