Banana Boats

Bananas are a staple in our household. Each time I go to the grocery store, I make sure to purchase a bunch so that Justin and I are able to eat one every day. However, it is inevitable that sometimes we don’t finish them all.

This leaves us with a few speckled bananas, teetering precariously between the ripe stage and the mushy, overripe stage.

Yes, I could utilize the bananas to make banana bread. That would be yummy. However, I also enjoy another option: one of the dessert variety.

Did you ever make banana boats as a kid? I remember making these at Girl Scout camp for dessert around the campfire. I thought it would be fun to recreate this treat, but in our oven this time.

The process is simple: peel open one side of the banana, slice it down the middle to open it up, and add some chocolate chips…

Add a few marshmallows on top (I kind of went overboard)…or if you’re not feeling the marshmallows, you can be like Justin and spread a dollop of peanut butter. Actually, you could get really creative with the toppings if you wanted to: caramel sauce and nuts would probably be a wonderful addition!

Replace the peeled back banana flap, wrap your banana boat up in tin foil, and place in the oven…

When removed from the oven, you are met with gooey, delicious, melty goodness. Mmmm.

Ingredients

*Banana(s)

*Chocolate chips

*Marshmallows

*Peanut butter, caramel sauce, walnuts, etc (optional)

*Tin foil

Instructions

1. Preheat oven to 400 degrees F.

2. Peel back one side of the banana, while still keeping the peel attached.

3. Using a knife, cut a slit down the center of the banana to create an opening to place toppings.

4. Fill the opening of the banana with chocolate chips and marshmallows (and other various toppings if desired).

5. Place the peel back over the banana and wrap in aluminum foil.

6. Place banana in oven for about 10 minutes, or until banana skin is black. If you are using a campfire, place the banana around the coals of the fire (making sure they don’t get in contact with flames) for the same amount of time.

7. Allow banana boat to cool for 2-3 minutes before removing aluminum foil and eating!

  • I LOVE this idea!! I’ve never done it before, but I definitely want to try it out! When we have extra bananas, I’ll saute them with honey, cinnamon and rum to make a yummy bananas foster ice cream topping!

      Hannah – Apples!?!? Wow – that sounds interesting! Did you use chocolate and marshmallows, or something different, like caramel, nuts, cinnamon, etc?

  • WHAT. I’ve never heard of that, but I am all over it. And I’d have to go with your hubby’s idea of using peanut butter. Oooh, or Nutella! Mmmm…

    • Debbie – Yes, I suppose you could consider banana bread to be dessert! Personally, I’ve never eaten it other than as a breakfast item, but I’m sure people eat it at other times too!

  • Haha so, I thought I’d update you: Last night, I got home and saw we had two bananas on their last legs sitting on the counter. When Mike came home, I told him that I wanted to bake them with chocolate chips, peanut butter and marshmallows. He said “What are you, six? Did you JUST make that up?” so I had to show him this post, lol!

    I made them and after he was done, he said “I gotta admit, that was pretty damn awesome.”

  • How in the WORLD have I never heard of this?! I LOVE bananas and I LOVE any kind of sweet goodness with them i.e. peanut butter or chocolate!

    I just did a blog post about banana milk…SO delicious (and an option that is slightly healthier than banana bread…which is always my go-to option for left over bananas!). You should definitely give it a try. Makes for a fabulous breakfast, and extra-yummy with peanut butter toast!
